Edited to be more clear: The folder Documents\Saved Games\Enshrouded also has only the enshroued_user.json file. My actual save files (Only played single player so far) are in Steam\userdata\<number>\1203620\remote just to be clear. I point out the extra folder only because that lack can cause confusion and this thread is the first result for me in Google at the moment so clarity is likely important for others.
Again - there are two savefile locations. Which one you have is depending if you are using cloud save or not.

Ofc if you use drive D instead of C or another location instead of Program Files (x86) for your Steam installation you will have to change those bits.
So many pages full of that incorrect information to find this finally. Thank you.
For those arriving late: This is the correct file you are trying to find to transfer your LOCAL PRIVATE save to a remote host or where you would want to put those files, if you were copying the world to your local private... anyhow hopefully I've said Local Private enough times for your search to get here quicker than mine did.
