Water Park and One Thousand and One Nights Achievements
What does it take to fulfill the requirements for both of these? I saw a "guide" on the Water Park one that said I only needed 2 ponds and 2 fountains to achieve it, but no matter where I place them, it doesn't give it to me. I also have a nook with about 10 plants and several seats in a separate zone where I keep all of my Desert dinos trying to get the One Thousand and One Nights achievement, but so far it's turned up zero, too. Any tips would be greatly appreciated.

Odd, for One Thousand and One Nights, all I had to do was place a single purple Ariacotta pillow and I got it (it may have been counting the desert plants in my pens in that section though, so 4 Ariacotta items total if it is counting them)

I currently have 2 medium ponds and 1 fountain in that same desert pen area, I'll check later if placing my Ariacotta fountain (the one currently there is Marlo's standard fountain) counts for Water Park.

I'd think it was the "Lazy" setting I had going right now, but I've had no trouble with getting the NPC achievements for their personal quest lines so I don't see how it would stop me from getting these ones.

As was everyone else, I was struggling with these, so when they unlocked it was a surprise and I do only partially remember what led to the unlock.

The first thing I am still not completely sure of are the terms "area", "zone" and "pen" in regards to achievements.

Water Park
Decorate a zone of your ranch with ponds and fountains.

What I did was use my southern "area"/zone of the farm, the one locked off by boulders/rocks, having cleaned that up, there was nothing there. Then I set up a pen there, fence and gate. The pen should default to the grassy (valley?) biome. I then placed a large pool, and small pool, and a fountain into that pen... all those you can get from Marlo. I think that unlocked it for me. IMO, the trick seems to be that you need to use a pen, and/or it should be in a area/zone with nothing else going on.

One Thousand and one Nights
Decorate a zone of your ranch with Archeo Pelago decor.

Again, placed a pen in the southern "area"/zone of the farm, this time I placed a few Archeo Pelago "mud fences" inside the pen, some cacti, pot hanging from L-shaped frame, table with plant on, a square pond, some other plants in pots... as long as its stuff you bought from the Archeo Pelago vendor Alyx (Has a stand on the northern island in the lake, appears from mid-morning onward on most days. Sells the equivalent of lawn ornaments.). This changes the biome (after 3 items) to desert and I think that unlocked the achievement.

Hope that helps in some way.

Finally got a chance to test it out, and it seems like putting stuff in pens is the only option to unlock them. I just added a few more plants to the Utahraptor pen I had set up, and One Thousand and One Nights happened. It took me placing down 2 medium ponds, 2 fountains, and one of Freya's ponds for Water Park to unlock, so I think it has more to do with the amount of different items, rather than the amount of items themselves.
Hello folks! I checked in with the team and have some clarifying information for these achievements. I'll be putting them behind spoiler tags below!
For Water Park, you need 5 or more water-y items (like ponds, fountains, that sort of thing) in a given 'zone'- these are the areas that you clear debris or shrubs/wood/boulders from, and don't include the pathways between these areas.
For One Thousand and One Nights you need 5 or more items in a zone with a 'desert' biome tag- It doesn't matter if the it's being used to make the pen desert (doesnt matter if its being used to make a pen biome change or not, just that its placed)
