Report a translation problem
I currently have 2 medium ponds and 1 fountain in that same desert pen area, I'll check later if placing my Ariacotta fountain (the one currently there is Marlo's standard fountain) counts for Water Park.
The first thing I am still not completely sure of are the terms "area", "zone" and "pen" in regards to achievements.

Water Park
Decorate a zone of your ranch with ponds and fountains.
What I did was use my southern "area"/zone of the farm, the one locked off by boulders/rocks, having cleaned that up, there was nothing there. Then I set up a pen there, fence and gate. The pen should default to the grassy (valley?) biome. I then placed a large pool, and small pool, and a fountain into that pen... all those you can get from Marlo. I think that unlocked it for me. IMO, the trick seems to be that you need to use a pen, and/or it should be in a area/zone with nothing else going on.
One Thousand and one Nights
Decorate a zone of your ranch with Archeo Pelago decor.
Again, placed a pen in the southern "area"/zone of the farm, this time I placed a few Archeo Pelago "mud fences" inside the pen, some cacti, pot hanging from L-shaped frame, table with plant on, a square pond, some other plants in pots... as long as its stuff you bought from the Archeo Pelago vendor Alyx (Has a stand on the northern island in the lake, appears from mid-morning onward on most days. Sells the equivalent of lawn ornaments.). This changes the biome (after 3 items) to desert and I think that unlocked the achievement.

Finally got a chance to test it out, and it seems like putting stuff in pens is the only option to unlock them. I just added a few more plants to the Utahraptor pen I had set up, and One Thousand and One Nights happened. It took me placing down 2 medium ponds, 2 fountains, and one of Freya's ponds for Water Park to unlock, so I think it has more to do with the amount of different items, rather than the amount of items themselves.
For Water Park, you need 5 or more water-y items (like ponds, fountains, that sort of thing) in a given 'zone'- these are the areas that you clear debris or shrubs/wood/boulders from, and don't include the pathways between these areas.
For One Thousand and One Nights you need 5 or more items in a zone with a 'desert' biome tag- It doesn't matter if the it's being used to make the pen desert (doesnt matter if its being used to make a pen biome change or not, just that its placed)
