Mounted Combat basics
1. Any pet besides Centipede can be mounted, it's not just Horse.
2. You can only ride your own pet, not the pet of other party members.
3. Your pet has to be at least ONE size larger than you.
Most pets start at Medium at level 1, and evolve into Large at level 7.
Horses start at Large so can be mounted as soon as level 1.
By default, Humans and most races are Medium size.
You can change this with size reducing spells. For example, cast Reduce Person on a Human and they will be able to ride their Medium Dog at level 1.
4. While mounted, enemies will target your pet AC for attacks instead of the rider!
This is huge, and lets you fully focus the rider on attack & offense.
Besides spells, the only way for the rider to be hit is through Attacks of Opportunity, such as when moving past the enemies.

For the Cavalier Gendarme build with 4k Damage per attack:
It is focused on Mounted Combat + Charge.
Cavaliers get amazing boosts to Charge for higher damage and AB.
Spirit Charge feat highly increases Charge damage as well.
When combined with the Trickster Mythic Path, and high Crit Range weapons like Fauchard & Falchion, you can eventually reach 10-20/5x Criticals, so around 50% crit chance.
With this build, you can also easily get the MASTERFUL CHARGE Achievement!
You can even Charge OUT OF BATTLE to easily catch enemies unaware, flat footed and ambush them with a FREE attack before Initiative is even rolled as explained here:

You should certanly have a Skald merc/party member to aid your Cavalier, especially as they can give POUNCE to your whole party for full attack when charging!
