Where to see relevant ability score for casting?
I am wanting to experiment with multiclassing? However I am not finding anything in the level up menu that shows what ability score I am going to need for each classes spellcasting. To make things even worst there are subclasses that change the casting ability from the default class. So am I just missing it or did the ui designer drop the ball here?

It's not though. Like for example I want to level into sorcerer. I know off the top of my head it is a charisma caster. Nowhere I can see on the level up chart even says the word charisma.

I may remember wrong, but I think that info appears only during the char creation screen, but not on the level up screen.

It doesn't even really say at character creation. It's implied from the recommended stats but not spelled out. I never really looked since I draw most of my info from my innate knowledge of tabletop.

It does. If you press Details button. In the grid at top-right corner. It has number of spells per day, type of casting and casting stat.

It is amazing to me how even after 6 DLC's nobody had the time to make a simple change to just add one word to each class description to easily show this needed info.

Fair enough. I even went through creation to double check and this is the one button I didn't press, heh. As far as I can tell this is the only place it says it too.

its there....

just looked at a build video on youtube....

on the screen where you choose the class and archetypes....

to the left side is the list of classes.... and right side details of the class...

at bottom right it shows the chart of the class progression....

and right above the chart is a bunch of boxes detailing

fort / will / reflex
BAB / HP per level / HP
max level of spells / caster ability (the stat they use to cast spells)/ caster type (spont or memorizing)

That box is only at character creation, not at level up. Which is what is making multiclassing so frustrating.

This. I've run into this very same issue trying to multiclass characters and have had to alt-tab out to a wiki to look it up on many occasions.
