And you need to be a fighter
If it was that you couldn't be fighter it would be on class selection screen during lvl up.
Lvls caps at lvl 20. Unless you go Legend MP in act 5, that raises cap by 20 (and gives EXP boost).
Multiclasssing without prestige class - Nothing gets continued unless it says that it scales with Character Level (instead of Class Level). Basic Attack Bonus(BAB) of each class is rounded down to whole number and then added (eg. if you had 20levels in 20 different classes that do not have full BAB you would have 0 BAB, full BAB means class gets 1 BAB at each level up). Since classes get most saves at lvl 1, multiclass will have bigger saves.
Prestige Classes can continue spellcasting and/or bloodline.
But unfortunately I don't understand your explanation of classes. Is it worth having another class at my level or should I just stick to one class?
Full BAB classes with no spellcasting are the hardest to ef up by multiclassing.
Fo Beastkin it depends if you are using Feral Transformation? If yes you want to get to lvl 12 asap to get 3rd form. If not you can multiclass whenever you want.
Basically the way classes work is that your character has 20 slots, which are called character levels. Each one of these character levels he can slot a class level in to, and he has to take the class levels in order from 1-20. And you get the bonuses to your character that those class levels would give you, along with the set character level feats that you get from simply levelling up.
As for whether it is worth multiclassing or not it depends entirely on the build. A lot of minmaxing can be done by taking one level of a class that has a lot of benefits frontloaded on to its lower levels vivisectionist is one popular one for sneak attack damage, fighter is another one for weapon and armor proficiencies if you intent to play a class that doesn't otherwise get them as it is more efficient than using feats to get the same proficiencies in some cases, ranger is another one for weapon proficiencies and also favored enemy.
The simple version though is that unless you're familiar with the ruleset or following an existing build guide multiclassing is not a good idea as you're just as likely to make your character worse as you are make them better.
