I think I give up on Camellia's class
I've been playing this game off and on since it came out (finally doing a full run-through since development is finally over). I like Camellia as a character. But good god do I hate the Spirit Hunter class (and probably all shamans). It's the most jack-of-all-trades class ever and fills no particular role.

I really wish there was a role-play friendly class I could respec her to, but her class is so wrapped up in her story. Can anyone help me rationalize a different class? Is a different shaman subclass better? Does a subclass in a different class fit her story?

I do not like Spirit Hunter either on her. But I do believe the Shaman class is the most fitting on her. In particular Possessed or Unsworn. Depending on your take of her spirit friend.

Other classes I could alternatively picture Camellia as... hm, maybe Inciter? Would be a fit for her personality if nothing else.
She makes a decent hunter, and we know she likes going after prey...

Sounds more like some variant of slayer.

I respecced her into 1 Master of All rogue and the rest Vivi. Not sure if that's a good build or not. It also completely ignores her "I'm just a shaman" thing. Sigh...no good answers.
Sorry, my only real use for her is as the romance option on a lich playthrough. 😈
I've found that from the starting classes, with no respecing, Camellia makes the best tank, honestly. It's between her and Woljif, spells make that much of a difference, at least in the late game.

Heh, I sacrificed that little darling without a seconds hesitation. Telling her how it is shortly beforehand when she pulled her BS on the 'romance' with her, if you can call it that was absolutely priceless.

The spirit hunter class is fine. It has the hexes of a witch while still being a great tank/offtank. It allows for heals, the sword effects of a magus, and some support spellcasting. If you bucker spec them, then you can use the flying shield mythic to further buff the AC of your other characters.

I used a Spirit Hunter for Lord of Nothing, and they were part of the reason I could easily wreck the bonus boss.

I want to emphasize I am talking about the class and not our "helpful" companion...

Just take 2nd nature spirit with Mount and spec her for rapier or elven blade. Together with battle spirit she can do crazy damage and still be good caster/hexer/buffer/tank

I don't understand how she can use high dexterity with armor. Right now she is level 8 and has dex bonus of +5, but the medium armor she is using is limiting the bonus to +4. In the video she has +16 dex with AC of 113! How?

A lot of stacking bonuses. Her AC from dexterity is definitely capped in the video, as indicated by the red background of the Dexterity stat.
I am pretty sure she only gets +3 AC from her Dexterity.

I think I used some of the haramakis in the end game for Camellia. Those give a small armor class boost but have no DEX cap and give other bonuses (I think one gives big boost to saves, for example). Also you can use robes and bracers of armor for her, bracers go up to +8 AC (at least) and also have no DEX cap.

Early game you need to manage her armor AC and DEX AC bonus, for sure.

There is also a mythic feat that raises the max dex bonus for light armor along with giving a passive dodge percentage (avoidance I believe). A dex build spirit hunter does well from an AC and a damage standpoint.

Fair, fair :) And I think that Camellia had around 80+ AC when I played her last time, so not as high as on the video but I certainly wasn't worried of getting hit, I can tell you that.

I did not link the build video, so I was not speaking to that. Early in Act 1 you get a mithral chain shirt that has a dex bonus of 6. While you may get a little more innate AC with a medium armor, I will take the light for it's passive avoidance (which will stack with spells like blur). And that is before haramakis which give you the benefits of light armor with minmal drawbacks. They work as well for front line dex builds as they do for casters.
