Both of these professions are perfect for the dual scimitar.
No, you can't really be a Demon, but you can choose the Demon path at the end of Act2.
Just going with pure Slayer or Ranger is fine. You can even use some other classes depending on how much want to engage with magic. There are a lot of classes that can fit a dual wield build in.
Fighter, Rogue and even Monk should all be able to fit in dual wielding without too many problems.
One of your early companions for example is basically a dual wielding mage/rogue hybrid that also has a lot of Trickery. :D
As hiburnashua said scimitars are not light, i was pretty sure they were...i stand corrected. The comment went useless as it was for light weapons, so i deleted it...sorry for the confusion.
Stil i will keep some of the info from the previous deleted comment...
A. Need a base of 15 dexterity to be able to adquiere twi weapons fighting feat (reducing penalties).
B. At the first few levels it would be hard to play with 2 weapons appart from light ones, some feats should be adquiere first or the attack bonus would be too low to hit anything.
C. If the class you choose have trickery or perception, you may adquire the other via background selection.
D. Have in mind while creating the character that trickery benefits from dexterity and perception from wisdom. If you do no manage to make one or both skills of your class, you may need spend some points into intelligence to get more points to spend as you level up.
E. Some daemon role may be played by choosing a tiefling, or using some class with bloodlines (like the bloodrager).
