Saving Galfrey
Sounds like a lame television show. Does anyone know if there's a time limit to get to Galfrey in Act 5? I have all these quests that I want to try to do before the end of the chapter and it seems that rescuing Galfrey ends the chapter. Is that right?

More or less, yeah. You can take years or even a decade to do random stuff in Act 5, crusade morale allowing. And as a reminder, Morale is a soft time limit that only actually affects unit recruitment rate and crusade income, you can't game-over from low morale. As long as your army's strong enough to punch through to Iz before morale falls too much, you're good. Galfrey is in the standard RPG time warp until you get around to her rescue.

The final encounter of the act and of the game is Threshold Fortress, which only appears after clearing Iz. Several other zones will also appear post-Iz as well, allowing you to finally wrap up some long-standing quests like Heart of Creation.

Well, sort of. It also dramatically affects your ability to deal damage during crusade battles, and even after clearing the map, there are random demon armies wandering.

Is there a way to save Galfrey AND the crusaders guarding the SoV? Or is it one or the other?

You can, but you may have past the point where you can alter those decisions.

If you gave Galfrey the Lexicon in Act 3, and you are on good terms with Hulrun, you can save both.

It makes little difference if you save both, I'd just enjoy the ride and read up on how to do things "perfectly" on a new run and not reload act 3 just to do that.
