with that said, if you still want to play mounted i recommend either full gendarme for horse or take 3 levels in hunter and then go full gendarme afterwards so you can get a triceratops or boar which is much better than a horse. albeit you'll lose the better charge from gendarme.
But i'm glad i didn't pick anything bigger. I've seen alot of people in reviews mention this... but the big pets like the triceratops and the mammoth are just plain too big for most of the narrow corridors and dungeons the game takes place in.
Even playing with the item that gives you an extra triceratops pet made me realize this problem... XD
Of course, if you go for a run on Unfair, that's another story...
There's another way to mount dragons, via brown transmutation class
But there's no animation for the dragon riding so your character will just be inside the dragon.

Not sure how you'll look when you ride the Azata dragon though
