How do you use midnight bolts for demon lords?
So, the game hinted that you are supposed to be using midnight bolts on demon lords, the question is, do you just shoot them with it at any point, or do you have to use it as the finishing blow in order to kill them? Considering they are a one use weapon I just wanted to confirm before using mine.

Give them to an archer (belt slot) and activate them. The next normal attack will be with a bolt.

Yes, I know how to shoot them, I just mean do you have to use them in a specific way. Do they have to be used as the finishing blow to kill the demon lord or do you just need to hurt them with it?

I doesn't say you're supposed to use them on demon lords, just that you can. They don't have any special effect. They just do damage, ignore DR and can't miss. They do what they say they do. You're free to use them on anything.

afaik it make the boss drop something and you need to pick it up before killing the boss or it's gone forever

They do have a special effect on Demon Lords -- if you use them properly, you get a special drop when they die, and that drop unlocks a secret ending.

In regards to the OP's question, dunno, but I'm curious as to the answer.

Just use them during the fight. Doesn't need to be the killing blow.

Fair warning if you are pursuing the secret ending... there are a LOT of requirements, some so early that you can lock yourself out of the ending before even realizing it is an option. It is doable without using a guide, but almost impossible to do accidentally by just using the bolts. There are clues 60 hours in that you won't get that ending because of a choice you made early Act I. That's fine, the ending is SUPPOSED to be difficult to get, considering the stakes and story reward. I actually locked myself out of it with the very first significant decision you can make.

Interesting. After this message I looked up a guide (https://www.neoseeker.com/pathfinder-wrath-of-the-righteous/guides/Secret_Ending) and I know what you are talking about (and I made the same mistake... :( ) but... It doesn't seem like that decision should matter. At worst, it locks you out of the "best" secret ending, but you should be able to do part of it even with the wrong decision.

Spoilers for those who want to know the key decision without looking at the rest of the guide:
The Purple Crystal Knife that you get in the Market Square in Act 1 is one of the Fresh Nahyndrian Crystals that you need to get the secret ending. You need a total of 6 to get the best possible secret ending, and there are exactly 5 midnight bolts in the game, so you'll be one short if choose one of the options at the wardstone that destroys the knife. The guide doesn't make it clear why this particular crystal is critical, though.
