Actually damaging him enough to stop the fight prematurely doesn't do much other than change the dialogue.
Use a midnight bolt for altered dialogue / options for later
You can outrun him with haste and he starts the fight by not moving.
I have survived to round 30. Is there something wrong with my game?
Yeah and a very low HP pool. 40 touch AC is pretty low at this stage (if you have a char resisting its CCs able to do touch AC damage that is - even for debuffed chars).
Otherwise you have mythic spells on angel, demon and lich path which will kill him in 3 rounds with rods. Might be a bit more difficult on azata and aeon (at least you need to deal with him another way).
Basically the main difficulty with Baphomet is having an able char to hit him. Otherwise he does close to no dammage, have low resists and low hp pool. Wayyyy easier than quasit or playful darkness
