Iceplant - 2 AC
Icy Protector - 2 AC
Lady Callandra's Chainshirt -11 AC
Belt of Dexterity - 1 AC
Ring of Protection - 1 AC
Mithral Heavy Shield - 4 AC
Dodge - 1 AC
Then add in buffs such as:
Defensive Stance - 3 AC
Barkskin - 2 AC
You can easily reach 37+ which is more than enough for act 1.
In act 2 you have to rely more on debuffs and buffs to get more effective AC and even then most of the damage you'll take is more from spells than melee attacks.

The best buckler you can get in act 2 is a +2. There is only 1 unique rapier in act 2 that I've found so far.

I picked up two named bucklers in Act 2.
Deceiving Facade (+1, makes mirror images)
Eluding Facade (+2, +2 more vs Two handed weapons)
And your camp vendor sells simple +1 bucklers.
All of which is good since both my cavalier and Camellia are both buckler/rapier people.
