Which companions are you looking for?
for me I actually have a text document of all my companion builds planned out in advance.... like looking at some of those guides I just plug em in the document maybe tweak em a bit for my playstyle and I save the document....
that way getting into the game now.... or months from now I can just go back to that document and past me has it already for future me to just alt tab back and forth to match it with game and document... so I dont have to pour hours into relearning what steps to take and most importantly "why"...
Any caster companion is fine either pure or combined with loremaster. No reason to even dip anything else. For non caster on normal you can honestly just use common sense. Full attack bonus classes match well with full attack bonus classes, anything that contains sneak attack can be stacked with other sneak attack classes (and vivisectionist and slayer are always great for that). Same goes for animal companions, keep leveling them in classes that make them better.
The only companion that really benefits from multiclass even on normal is Wenduag, imo. Pure fighter is fine for 2-10 levels to grab some feats but its kinda boring to go all in with it.
For Nenio I always go Loremaster. I just love the ability to pick any spells you need, it's just so good. Woljif sometimes goes full Rogue, sometimes 10 levels of Arcane trickster, sometimes I go full melee for him and take Duelist levels.
That's pretty much what I do for multiclassing, honestly. I like pure classes mostly or just go with one prestige class instead of multiple other classes.
cRPG Bro has a good breakdown of his builds.... if I find a build I like I just watch the video first to see what he's planning and explaining.... and if I like it i'll just skip to the highlighted sections and tab back and forth putting it into my companion document I have... making adjustments here and there if I wanna play it somewhat differently.... such as his Nenio build I made adjustments for mine so she can be my main buffer super early on...
normally I prefer to stick to just main class of the character and thats it.... its just a story thing for me that im not a fan of multiclassing into weird combinations....
though his recent Seelah build he made has only 11 levels of paladin and rest multiclassing.... im using it now because his choices of multiclassing seem like they can fit into the story better... which already by level 3 my Seelah has her AC almost in the 30's.... lol... she is so tanky...
but yeah thats the point of the video's.... watch em and see how and why they made their choices and what alternatives they would put in them depending on what your goal is to play them.... and just put it in the document.... just looking at a text plug and play aint gonna give you much feedback into learning "how" it works...
for example the Seelah build has...
level 2 stigmatized witch with lizard familiar, ice plant hex, and plagued condition....
level 3 traditional monk with crane style... with heavy armor focus as 3rd lvl feat
that dont explain a lot.... but in his video he explains the reasons behind it.... the witch dip actually give a bonus to AC early on... with the lizard providing a +1 and iceplant a +2 thats 3 extra AC.... plus you can get a ring early on that doubles the iceplant hex making it total to +5 AC.... and plagued condition makes you more vulnerable to diseases and immune to the sickened condition.... but Seelah as a paladin eventually becomes immune to diseases so it ends up being a win win where she eventually rubs out the negatives of her curse naturally through paladin progression...
traditional monk dip gives high bonuses to saves as well as a early access to crane style which lowers penalties for fighting defensively by 2 and gives extra AC for fighting defensively... and heavy armor focus gives an extra +1 AC for wearing heavy armor.... giving you an extra 2 AC...
so thats an extra 5 AC total early on by time hitting level 3... and fighting defensively with 3 ranks in mobility makes that go up to +8 AC...
you normally dont get that detailed in written guides.... they just give their list of stuff and dont explain it afterall... not really giving you an idea of how their played and you have to figure it out from the build yourself.... which might not be the way they intended it to work "right"...
Instead of simply copying CRPGBro's builds I find it interesting to just listen to his build ideas and take specific ideas from his builds that I might apply later on to something else. While I've watched way more of his videos than I would care to admit (I just find it entertaining to have this kind of discussion on WOTR Mechanics...) I've never actually copied any of his builds.
thats what I was meaning.... he does a good job explaining his decisions and alternative choices to em..... I prefer those type of builds through video than written out copy paste ones.... much rather understand the method behind the build rather than the build itself so I can learn something new...
1 Rowdy level for Vital Strike at level 2 can be an early game changer, they don't get Finesse but some builds don't need it (Wenduag if you keep her using a bow for instance especially if you add levels that add to sneak attack).

Gamefaq have mostly "pure" class. Although many of them are massively improved with a single dip, or by switching to another class at one point, so even gamefaq do multiclassing.
It should be noted, some companion class are much weaker if you don't multiclass. Lann zen archer bring very little past the first few level. Ulbrig have no interest in the class past lvl 15. Ember benefit MASSIVELY with a 1lvl dip as sorcerer crossblooded for at least the elemental conversion + ascendent element mythic.
I cannot emphasize on how much some classes benefits massively by multiclassing, even a single level "dip". This is doubly so for "prestige" class, which are usually the continuity of the main class and most people don't really consider it multiclassing. I mean, loremaster is just your caster but with extra stuff.
If you play normal or below it's not that much an issue. It's not really good for some like Ember, but it's doable. But at this point you can use the premade build and it should be OK. They are not the best build, but you're not going best anyway. They are workable build for lower difficulties.
Characters that don't care about multiclassing (even if they can benefit from it, it's not massive) :
-"good" Arue (moslty kept pure, some people like myself make her a bard/skald once she get quarry, but it's a choice. Pure good Arue is very good)
-Seelah (most people keep her pure, although with DLC getting the hippogryph mount is a good idea and it's 1lvl dip)
-Nenio (best if you go loremaster, but she can be kept pure)
-Daeran (same as above)
-Sosiel (depend on the build, if caster, then same as above)
-Camellia (most don't multiclass her, although with DLC a 1 lvl dip in drunken master monk is a thing)
The one that greatly benefit from going multiclass or straight up another class entirely :
-Greybor. barely playable at normal and even less so above due to no survability. A dead DPS do 0 DPS. Honestly, even with multiclassing he suffer.
-Regill. Playable but poor class if you stay pure
-Lann. Playable but get everything from Zen archer at lvl 3. Swap to ranger-demonslayer at this point and he is massively improved. Or slayer, whatever. Many people make him a warpriest/cleric to, due to high wisdom.
-Ember. Barely playable beyond mid act 3 due to everyone resisting fire and immune to electricity. You can do ascendent fire but you are still limited. A 1 lvl dip as a sorcerer crossblooded to pick fire conversion + fire damage extra dice will increase her damage AND fix the elemental problem (ascendent fire now affect all her spell).
-Wenduag. Playable if you stay fighter, no argument. Can be made a powerhouse depending on what you do otherwise (usually people switch her to throwing axes).
-Woljif. Playable if you keep to lower difficulties. At normal and above his lack of survability and damage is an issue. Once he get the rogue perk at level 4, switching to sword saint/arcane rider or vivisectionist will fix both of those issue
-Evil arue and that one companion that is spoilery you can get in act 4 through another companion quest are lost cause no matter what (too many level, too many wasted feats and decisions).
-Ulbrig (dlc companion). Perfectly playable if you stay pure, but the last 5lvl are wasted.
