In regards to dialogue multiclassing Seelah won't change anything. It doesn't even violate RP really as the game locks her 1st level as Paladin. So she is never NOT a Paladin in a literal sense.
There are really good class analysis videos online. The playstyle of the uploader may bias it so it may be worth checking multiple videos. CRPGBro is a personal favorite but Mortismal Gaming and Slandered Gaming are good watches too.
Addendum: If you go down that rabbit hole I recommend thinking of them as more "suggestions" and ways to expand how you think of the game mechanics. While I like CRPGBro's class build videos for example I've never actually copied his builds. He's introduced me to some mechanics I've never experimented with in the past though.
The other thing is that you can technically build any single class radically differently. I suspect Seelah if auto-level will progress as a Sword and Shield Longsword Specialist with Weapon Bond. If you are something like - A Mounted Two-Handed sword user - Your Paladin will play radically different despite you both technically being Paladins.
You will have overlapping spells and the like. But it doesn't take long before you have >5 companions.
I'll just keep an eye on how the game levels her up and adjust my PC to be different. I don't know of any info or sites that gives her build if game is set to auto level her.
I'm playing myself a skald that'll go trickster as I want a specific character to join my crusade and I've never played a skald. The class works pretty well as a 2-handed buffer. With some illusion spells it's tanky enough. Seelah has pretty much the same attributes I value for the build so making her a skald is a good option as mentioned. She should be fine with most melee builds though.
Do note that Tortured Crusader is not affected by Smite Evil enhancing mythic feats and equipment. That's a bug that needs to be fixed.
