I had the fight paused when I originally posted this, so when I went back and kept up with beatdowns (seelah is quickly becoming a go-to for these ridiculous bossfights, mark of justice is just about a necessity) I finally saw the counter on the soul description. the counter didn't appear when I first looked, not sure if that was a bug or I was just looking at it from the wrong screen or something. Either way, it turned into game of manually killing my own summons to keep them from feeding the dragon and sending any animal companions unable to do damage to the dragon to the back room you enter the arena from since that was out of range of the breaths. Luckily my PC is a dual longsword build, and I also had Arushalae and Lann to spam arrows into him to chip down those soul counters.
