But take heavy armor focus, shield focus and then the mythic feats Tower Shield Fortress and Heavy Armor Endurance. That is some decent DR with adamantine full plate (note, mithril full plate actually counts as medium armor for these mythic feats).
Get a 13 int and 13 dex to take dodge and combat expertise if you really want to go whole hog on the defense idea. You could even go half-orc or dwarf and take the feat that gives you an addition point of natural armor.
Since evasions doesn't work (or it shouldn't work) while in heavy armor why not go stalwart defender past level 7 or so to increase that stacking DR.
Want to know something really funny? Reading arcane scrolls doesn't require an arcane armor check so if you want some increased protection max out your Use Magic Device skill and go whole hog on fun things like mirror image, blink (nothing short of blind fighting gets to negate this), seamantle, greater false life. Iron Body would provide you with 15 more DR to stack as well as making you immune to most status effects, crits and negative energy levels. Can even stack on some offense with spells like divine favor, lead blades, divine power, divine power, holy sword and resounding blow. Even if you dump your Cha it won't matter too much. Just take one of the backgrounds that makes UMD a class skill, take skill focus - UMD (your a fighter, it's not like you don't have the feats to burn), and equip one of the numerous items that gives you a bonus to UMD and you are good. Especially with a 24 hour heroism/greater heroism pushing things over the top.
if you give animal companions at least 3 int they can qualify for more feats.... like the crane style line of feats... allowing them to be evasive tanks.... buff them up with things like animal growth and blur and such they can be even harder to hit...(enduring and greater enduring makes it way more effective with 24 hour duration buffs)... plus giving them bulwark archetype gives them damage reduction too...
after a certain point I dont even give them barding armor to wear since their Dex is so high.... just bracers of armor so they can use their high dex to AC... or just cast mage armor till you can get at least a +4 bracers of armor...
and I like the horse specifically cause animal growth actually works on them.... it increases their size category.... so that means I can use enlarge person growth on my whole party and have everyone enlarged and the ones on mounts still able to mount.... enlarging provides extra reach and increases weapon damage by 1 size category....
plus the animal companions provide more carry capacity.... meaning your able to carry more loot than normal..... im the type that likes to loot everything and sell or store items for later use.... so animal companions are practically like getting free bags of holding to increase carry weight... which of course animal growth and enlarge person mass with 24 hour duration also helps with this....
