Baphomet isn't available as an deity. But you can pledge yourself to him as an Demon.
For example if you worship Cayden (god of drinking) you can invoke him to get a buff defending the inn in the first Act.
If you worship Callistia you get to invoke her name on vengeance topics and get buffs from her.
I'm sure Iomedae has hers too.
Other ones include: Gorrum making you super-sayan during the fight in Act 3 against the Kelid, Sarenae giving you a massive buff to fire damage when you go to Wintersun, and Callistra buffing you when you fight Minagho (if you swore revenge on her in Act 1).
Also when you enter the Abyss you get a unique line of introspective dialogue where your character reflects on how it feels to be there, based on your god. If you worship Gozreh your character will be profoundly unhappy and never felt further from home, whereras a Callistra worshipper will be disgusted but excited at the opportunities for unfettered revenge. Every deity seems to have their own interaction here, which I truly adore.
Generally the deities do have minor reactivity and little lines of dialogue throughout the story, but nothing that will radically reshape the plot. Usually it's just some flavour text or giving you a buff for one fight.
Is the arue romance better overall if you're going azata? I was planning to romance her on my second playthrough but i was thinking of Aeon for that route.
Aeon is sort of the complete antithesis of Arue - I think it might even be impossible to keep her in your party if you pursue it. They are the embodiment of cosmic order and everything residing in and behaving according to the rules of its plane, so a demon trying to ascend from the abyss is completely unacceptable to them. To an Aeon, Arue SHOULD be a murderous succubus monster.
Unless you are a Renegade Aeon, since they are more emotionally driven/bend the rules. Though you'd miss out on Aeon's special/specific ending and unique story elements since you have to be a True Aeon for that.
By the by, I've done a True Aeon playthrough and romanced Arue just fine. You'll just have to pick Neutral options from time to time instead of always Lawful. Personally, I chose various options ranging from Chaotic to Evil to Good and Lawful. Overall kept myself in Lawful Neutral throughout and True Aeon. I RP'ed it as you are initially not a full Aeon and thus are able to make some mistakes, then later on selecting certain options for "cosmic balance". (Like saving Aasimars/Slaves from the Abyss since they technically shouldn't be there to begin with, or going full rage murderhobo since you're in the Abyss and that's what Abyssians do)
Nethys has a nice dialog where your characters asks Areelu at the end of act 2 something like "Nethys destroys with one hand and creates with the other. What do you create?" And she simply nods as an answer.
So far as Iomede goes, I got an extra interaction with Radiance, but not sure if that's because of Iomede or because I'm a paladin (I'm leaning that its the latter)
I started playing as Rovagug worshipper, but it seems to have quite nice interactions too with Demon Mythic Path choices so far.
