They did all the classes they could, the ones left are just too complex to implement. When I mean complex I do mean, financially compared to making a quest DLC that will sell more and require less programing (becasue debugging class features is a real pain and costs of lot to test).
They said before that implementing the summoner for example would have taken as much resources as all of the new classes of wotr pulled together (and some of the new classes are not even complete, like the hellknight signifer effectively missing half of the class).

The Arcanist is still missing a key Arcanist Exploit (Quick Study). I don't think they ever did an Investigator or most of the 'Occult' classes. Admittedly the Investigator mostly does skills things, which this game is not strong with, and, in combat, does worse sneak attack things than Slayers. And most of the other Occult classes would require an adjusted spell list plus other weirdness.

I'm already happy with the huge variety of classes and archetypes included so it's not too big a deal. I'd have really liked to see Summoner but can understand why they didn't. Their Eidolons would probably be messy to implement. Especially with some KEY spells that give you extra evolution points for a bit. Or spells that resummon the thing if it dies but with a bunch of caveats that don't normally affect it. And that's before deciding on Unchained or not versions (they are already using the Unchained Monk, Barbarian, and Rogue by default) and the pros and cons of each. It could all be done, but could easily be a mess compared to other classes.

i dont think that we need more classes but i would like to see even more spells and feats for existing ones, that would be cool, so you can configure your chars even more

As others have noted, the effort it would take to program the Occult Adventures classes (and Summoner) would be absolutely astronomical. The majority of Owlcat's dev team is already working on the Rogue Trader game.

But all is not lost. Wrath is a Unity game. The modding community put together several classes for Kingmaker which Owlcat couldn't get to (the Call Of The Wild mod for Kingmaker adds Arcanist, Brawler, Hunter, Occultist, Oracle, Witch, Skald, Warpriest, Bloodrager, Shaman, Investigator and more, for example). So it's entirely possible, if modders want to try it, to implement all kinds of things like new classes for Wrath. Given the scale of the project, it might take modders some time, though. Owlcat has to make money to survive, so they have to prioritize what their staff works on in terms of profit it will generate.

Much like the Infinity Engine (Baldur's Gate 1&2, IWD 1&2) and Neverwinter Nights 1&2 games two decades ago, these two Pathfinder games are absolutely genre-defining titles. They are true classics of the artform, and they will be played (and modded by a doting community) for literally decades.

There is a mod for WotR's which adds one of the missing occult classes: the Medium Class[github.com], to be precise. It's no Psychic, but still.

As for possibility of Owlcat adding more classes via DLC's... that really depends on how much Season Pass 2 sells. The Last Sarkorians was from what I can tell pretty well received. If the other two are in the same vein, chances are devs will cook up a Season Pass 3 afterwards.
