Gargoyle Attack Bug
Seems you can't go one play-through without some game breaking bug making you need to start all over. During the gargoyle attack before the chapel fight there's a pre scripted scene where gargoyles land down and attack the MC on the NE side of the map. These 3 gargoyles don't see the MC as I have invisibility, so they go for another target which happens to be Seelah (who currently isn't in the party, at least not until we reach her). Before I can even reach her, gargoyles go in and pretty much rough her up (normally she just falls unconscious from this, at least in every other play-through) to which I can take out the remaining gargoyles.

Not this time as "Seelah is dead!"pops up on the battle log and actually going to the area where her "cut-scene" allows her to re-join is just a gargoyle staring into space until you can actually skip the scene with the enter button. Seelah is dead, but there's no method to loot her corpse or even raise her with a spell, she's just not existent anymore. Testing with Dimension door to bypass her and end the assault, only to return to the same spot just gives us a green friendly gargoyle that still stares into space.

Time to restart again for the 50th time!

I had companions die in other scripted events and got the same message as you - "The companion is dead."

However, after a rest, they always come back to life and everything returns to normal.

Have you tried finishing off the gargoyles and then resting? It should help.

I've never had a companion die during the event, I think. And my current playthrough was normal difficulty, with the game giving me Wendaug as my first companion to support a wizard MC. Thanks a lot, game! Surround the two ranged people with murderous gargoyles and no frontliners!

They see you alright. Gargoyle AI was always advanced, so they focus on less tanky party members, always bee-lining for them. Very annoying on Regill's quest on Unfair.

You can skip entire segment with a Dimensional Door.

No they literally can't see me, the gargoyles base perception is 18 vs. my 44 Stealth on Unfair, even if they rolled a 20 they still wouldn't see me. Although the segment can be skipped via DD I don't see Seelah or Camellia as options to be re-added into the party, pretty much destroying any future side quests I want to use them for in the future. I even scrolled further into the video and they weren't shown for party travel selection. DD from the area effectively kills 2 companions.

Check the party selection at 4:24:11

This isn't your first playthrough, right? Then you probably remember that the missing companions, among whom are Seelah and Camellia, will rejoin you as you progress through the Lost Chapel. It doesn't matter if they die in a scripted scene.

Not my first play-through, no. However, in the video which was linked, the segment at 4:24:11 shows that even well past the Lost Chapel fight they are both still missing from the party roster when the MC is doing standard shopping. There are no other character portraits past Lann's protrait, just the UI border. Only Regil, Soisel, Ember, and Lann have effectively "survived" the gargoyle attack.

In my case however Seelah remains dead no matter what because the bug happened JUST as I saved, requiring a full restart of the game.

Well, just resurrect her body? Click resurrection scroll on portrait.

Dunno man, I went through Unfair with full mercenary party, and did all companion quests.

On gargoyle ambush event I did not even talk to story companions, just went to bottom left and killed gargoyles. So it's the same as in Solo video.

Seelah not even fighting anyone, she just has a cutscene when you approach.

Segment start at 4:05:00. Seelah can be seen at 4:47:57. As you can see, she has nothing to die from and protected by a scripted cutscene.

There is no body, there is no grey'd out character portrait to signify she's dead. She's just GONE, hence why I've titled this as a BUG. At 4:33:40 when the three gargoyles land to ambush you, I was invisible at this point from the WoV shrouded step ability. After they couldn't spot me or my other companions (who were hiding by the KC tent) they go for Seelah who at this point is not in the party, is off-screen, and has not initiated dialogue with the MC.

I save before I engage with the gargoyles only to find that RIGHT after she's been killed off-screen and I didn't see the "Seelah Dies!" text from all the combat info. Inspection of the corpse: I cannot target her for looting, I cannot target her for resurrection, there is no portrait of her, there is no yellow highlight upon hovering over said corpse. Upon a reload thinking it may fix/refresh all this her body is now GONE.

Cut-scene where you initiate dialogue with her is just replaced with a lone gargoyle staring off into space and the cut-scene will not end unless you forcefully end it by skipping.
