Have you tried finishing off the gargoyles and then resting? It should help.

No they literally can't see me, the gargoyles base perception is 18 vs. my 44 Stealth on Unfair, even if they rolled a 20 they still wouldn't see me. Although the segment can be skipped via DD I don't see Seelah or Camellia as options to be re-added into the party, pretty much destroying any future side quests I want to use them for in the future. I even scrolled further into the video and they weren't shown for party travel selection. DD from the area effectively kills 2 companions.

This isn't your first playthrough, right? Then you probably remember that the missing companions, among whom are Seelah and Camellia, will rejoin you as you progress through the Lost Chapel. It doesn't matter if they die in a scripted scene.
Not my first play-through, no. However, in the video which was linked, the segment at 4:24:11 shows that even well past the Lost Chapel fight they are both still missing from the party roster when the MC is doing standard shopping. There are no other character portraits past Lann's protrait, just the UI border. Only Regil, Soisel, Ember, and Lann have effectively "survived" the gargoyle attack.
In my case however Seelah remains dead no matter what because the bug happened JUST as I saved, requiring a full restart of the game.
Dunno man, I went through Unfair with full mercenary party, and did all companion quests.
On gargoyle ambush event I did not even talk to story companions, just went to bottom left and killed gargoyles. So it's the same as in Solo video.
Seelah not even fighting anyone, she just has a cutscene when you approach.

Segment start at 4:05:00. Seelah can be seen at 4:47:57. As you can see, she has nothing to die from and protected by a scripted cutscene.
There is no body, there is no grey'd out character portrait to signify she's dead. She's just GONE, hence why I've titled this as a BUG. At 4:33:40 when the three gargoyles land to ambush you, I was invisible at this point from the WoV shrouded step ability. After they couldn't spot me or my other companions (who were hiding by the KC tent) they go for Seelah who at this point is not in the party, is off-screen, and has not initiated dialogue with the MC.
I save before I engage with the gargoyles only to find that RIGHT after she's been killed off-screen and I didn't see the "Seelah Dies!" text from all the combat info. Inspection of the corpse: I cannot target her for looting, I cannot target her for resurrection, there is no portrait of her, there is no yellow highlight upon hovering over said corpse. Upon a reload thinking it may fix/refresh all this her body is now GONE.
Cut-scene where you initiate dialogue with her is just replaced with a lone gargoyle staring off into space and the cut-scene will not end unless you forcefully end it by skipping.
