Angel has a spell that removes fatigue from your party (while also doing minor damage).
Paladins can choose an ability to remove fatigue/exhaustion with lay on hands.
Enduring/Greater enduring spells is good for reducing rests required.
You don't need any of these though. Just being strong and steamrolling encounters will result in you resting very little. Any number of builds are good for that.
Kineticist is a good class but a lot of their abilities function better in turn based because you have to keep your allies from pathing into your effects and killing themselves. So the run takes longer (in real time).
I wasn't aware of this, what exactly are they nerfing for kineticists?
i didn't used the exploit which allow you, by leaving alone war camp or drezen then move a little then come back, to remove fatigue and exhaustion on every companions and refresh all their spells / abilities.
i finished the run with like 25 rest and it's probably possible to go under 10 if you use the exploit above.

I play normally, i rest every time a me or a companion is exausted and i use the food who increase by 4/6h the time before fatigue. I don't use exploits or anything specific to reduce rest number, i kill everything, including optionnal stuff (midnight islands) and i'm currently at the end of Chapter 3, the longest chapter (just before entering Midnight Fane) with 30 rests, i will have no problem finishing under 75 (probably under 50).
You don't need anything specific, 75 rest is a very big amount
