Reset character
I'm currently in ch.1, and I don't quite like the current build I'm using.
I know that we can reset character in ch.2, but is it a full-reset...? I mean, like re-creating a new character?

For the main character? Yes its a full reset.

For companions? No, they can only be respec to their original level when they were found.

For a full reset you need to use mods. Either the Respec mod or Toybox will do. This is particular useful for companions you meet relatively late into the game, since the levels of them are notable high.

Are they going to disable achievements?

Toybox has a setting for enabling achievements. And there is at least one standalone mod doing the same. But otherwise, yes.

Hilor is in chapter 1 as well, stands near Irabeth in the tavern.

Hilor can retrain urs own character including myth levels to level 1 and others characters since level u recruited them further on. Hes also at Drezen at tavern.

Hilor can retrain urs own character including myth levels to level 1 and others characters since level u recruited them further on. Hes also at Drezen at tavern.
I can only create new characters at Hilor. How can I retrain characters...?

From Hilor. One dialogue option is for recruiting mercenaries, the other is for retraining ("My companions and I need good training").

Edit: And as Mork said, the difficulty options you chose must allow it.

Sorry, but toybox only allow respec of companions to the original class, you cant change the original class. For full respec companions only with the respec mod, example make Camellia a wizard...
