OK. I'll offer some. Have a deep infirmary and lots of heals. Make sure you kill their guys soon, fast, and often, so they get as little chance to cast as possible.
This is the answer @OP. That and having a mage general yourself of course, but I'm taking that for granted.
Surprisingly you go from getting totally mauled by these mage generals to beating them quite easily with only a week ot two's extra soldiers.
The other big deal is buiding hospitals everywhere. This massively increases your capacity to resurrect troops after battle and gives you much more leeway to sustain hits from these mage generals.
So leave these jokers alone until a combo of more hospitals and more marksman makes them easy, go fight other demon armies instead meantime.
Don't forget to save before attempting a difficult battle. You can always decide the losses weren't worth it and reload.
It's a bit tedious with all the loading screens though, and of course you have to live with yourself afterwards ;P
