In addition, you'll get an pop-up that flatly tells you that you have reached the point-of-no-return, with the option to say "Yeah, we'll wait on saving the world -- I've got fish to catch!"
I forget the names of the quests, but generally:
Act 1: Assaulting the Gray Garrison
Act 2: The Battle of Drezen. Going into the camp outside of Drezen funnels you into the battle, so wait until you're ready to do that last army battle.
Act 3: Assaulting the Midnight Fane.
Act 4: Taking the Airship to Colphyr.
Act 5: Going to Threshold.
Spoilertagged for your convenience.
