The general idea is any round the enemy isn't trying to murder you is a huge bonus, which is why Ember witch spamming sleepytime hex by right clicking it is stronk.
So start the fight with protective luck on the tank, try sleep, and if that doesn't work keep casting the protective luck every turn.
You should also be buffing your party with the Communal Energy Resist spell -> pick Acid Resistance.
And like others said, you should be taking advantage of fortune/misfortune hexes(with cackle to prolong them) that Ember may have. Nenio also has pretty strong illusion spells she can spec into and give your party survivability through Greater Invisibility or Displacement
If you gave your spellcasters Mythic Elemental focuses, you should have them spamming elemental spells for huge damage too, since they'd be able to bypass immunities and resistances that way (as long as enemies don't have a reflex save)

By the way since others are recommending it. Ember's slumber spell doesn't work so well anymore as the devs seemed to have patched in a 24 hour one use per enemy timer on it.
Take a look at their status page and find the ♥♥♥♥♥ in their armor. Whether that is a low safe, touch ac or something else. There is usually something that they are weak against.
The slumber hex for example is really good against Minotaurs, Gargoyls, and Babaus. I even have decent chances against Vrocks. Of course it is useless against undead. And taking an enemy completely out of the fight for multiple rounds is really strong. At the start of a boss fight even a 1/20 chance to immediately stop the boss from doing anything can be far more useful than a scorching ray for some damage.
And yes, you can only use the slumber once per enemy, that is still very good.
Edit: Really the word that starts with a 'ch' and ends with an 'ink' is censored? Why?
And that hex has always been a once per 24 hours against any individual opponent. You can't keep hitting slumber on the same guy. (if you could before, that was a bug) Many hexes work like that. Evil Eye can be reused on the same person repeatedly, but both Slumber and Vulnerability only get one shot each per opponent.
Using Slumber to remove a key enemy requires some save scumming and playing in turn based mode. Otherwise, the odds are high that someone will auto-attack the sleeping foe, which isn't what you want at all (you want to use the Coup De Grace ability to kill them outright).
It was nerfed a bit in the patch, as some of the optional bosses are immune to it. And lots of bosses have high will saves, but rarely high enough to make success impossible.
Halfling 1 Scaled Fist, Overwhelming Soul Kineticist. Open with biggest blast possible. (Empowered maximized regular, empowered composite) Combat starts, win initiative, do it again. Collect loot.
