Is Blind fighting worth it?
Or does it become useless because of spells like true seeing?

It was almost mandatory in kingmaker for some of the end game fights. I hope such things like that are not in this game though.

it should protect you against gaze attacks so it might help a lot

The feat still gives you immunity to gaze attacks. I'm not aware of any creatures as bad as the Wild Hunt, but it seems like a small price for that kind of defense.

There is a certain type of demon that has a level-draining gaze attack, so it's nice for that but I think it's solid for your main damage dealers just in case.

A neat trick with blind fight, give it to your sneak attack and then cast mist over them and the enemy.
The enemy will be considered blind and miss 50% of the time while the sneak attacker gets to reroll that chance and blind opponents are considered flat footed and thus subject to sneak attacks.
