The spells' descriptions will tell you exactly what they do. They don't do things that they don't say they do in their description.
You'll need to cast Restoration for each negative level because it only removes one at a time. Greater Restoration is more expensive but will remove them all at once.
The negative levels bestowed by Enervation spells are temporary.
Not all negative levels will expire though. Sometimes they might allow you to make a saving throw after a day to determine if the negative level is permanent. Sometimes you get afflicted with a permanent negative level right off the bat.
