So, if you just want to stab a lot, without worrying about much else, Fighter, Ranger, or Barbarian could work. Monk would be able to use Sai with flurry of blows, but Trickster is Chaotic, while Monk requires Lawful Alignment.
Instead of stabbing a lot, go for one strong stab with the Rowdy archetype Rogue and Vital Strike things into oblivion.
One-weapon characters will never get as many attacks as a two-weapon character under the same circumstances.
So just use two rusty shivs. theres no reason to go single dagger. My main was Knife Master (Rogue) 4/Vivisectionist (Alch) 12/Fighter 4, Mythic Path - Trickster. Not uncommon to Sneak Attack Crit (the sneak attack damage isnt multiplied, but the base damage is) for 350-400.
Go Rowdy and do it. Free Vital Strike for assassination type one shots works well with a single weapon or dual wield and is honestly better than wasting a turn trying to get up close before I can use more than 1 attack per round.
