If you don't care about difficulty much - set Easy or Story and just have fun(wich is more prefereble, since there are a lot of bugs at the moment).
I'm playing on normal right now. Have a lvl up but have it sitting there cause I'm not sure where to go...
And yeah, the reason you are seeing Armiger 19/hellknight 1 is because hellknight requires too much investment for too little reward. It's a very unfortunate issue in Pathfinder 1E that is being exaggerated by the bloated stats of enemies in this game (which means you have to minmax harder and a class being weak is a much bigger problem to your success)

Is there something specific that bugs during respec? Ill avoid but just in case...
There are not too much of class-related interactions during the game. You can become official Hellknight, tho(More like knigh-without-an-order), and some NPCs will mention that you are a Hellknight.

It's for beta and only up to lvl 14, but I think you can build your character based on it.
I've played a bit with it on low difficulty, and it seems to be a fun build. Don't know if it'll work on Core or harder.
Your role is to destroy people by staying behind Seelah and Camellia (or any other tank you have).
Since mostly you fight demons, Smite Chaos comes in handy and Hellknight has some neat extra defenses and abilities. Aeon abilities and spellbook will fill any gaps you might have.
Yes, I'm indeed a big fan lorewise. Up to know I'm quite happy with their portrayal in game and Regill is great. Thanks for the advice will take in mind.

From what you've told - I guess, you have Regill, Lann, Aru, Daeran\Sosiel and Ember\Nenio in your constant party? This setup might be a little bit too fragile in the endgame.
