My first thought was a human cross blooded sorcerer with fast learner feat. But having more int enabling you to get more skillpoints too. So if you can combine that, you have a... monkey?
No monkey race. But you can make a kitsune.
Bard archeologist, only one I've messed with, has a ton of skill points and iirc just about if not all skills as class skills.
Wizard + the healer background
Rogue
Alchemist
Ranger
Barbarian
Druid
Fighter because of the numbers of feats they have
Inquisitor
Hunter?
Arcanist
Bard
Skald?

Sanctified Slayer (who can be your face, skill monkey, and main damage dealer)

If you're looking for a merc to add, Dirge bard is a great addition the existing companions don't cover.
You want to spread out your skills in your group a bit to match characters' highest ability scores anyway, so there's no need to pile as many as possible on a single person.
I know if the first game there were alot of instances where it was only your character that was able to attempt the check, Is that not the same in this game?
