That said if you are not soloing Unfair shouldn't be too much of an issue with whatever. Camilla can be a pretty good AC tank and you have the spare characters to babysit her occasional nat20 hits.
Also, if you are already having problems in Shield Maze you really should drop the difficulty, it will be way worse when trash mobs start running around with 40 AB. You can complete shield maze with a 10 AC sorc that can cast grease honestly.
If you want a summoner build you should look into how you can front load your damage the most - i.e. you will never have time to actually summon things in combat only before it, so that leaves you with Monster Tactician. As they cap at level 17 this leaves you with 3 levels to splash. You probably can get enough AC with monk/instinctual warrior splash to protect yourself at least from the 2nd attack and on. Honestly, don't know if you will be able to spam enough bodies out to do enough damage/meatwall yourself. Unfair mobs have high AB and they hurt - as of yet the best defense I found was alphastriking them and killing as much in the first round as possible.
