That's pretty Much It. Definitely a cool feature.
I wouldn't know. I haven't been able to buy it because of my current rig. Odds are there's a setting in the software. if not maybe someone who used it could help you.

I have the exact same setup as you and have this same issue. My bottom four fans, my cooler and my memory light up white at the title screen and green when I'm exploring, but my 6 fans at the top of my case don't light. It's very annoying. For what it's worth though, when someone is chasing me they all light up and flash red. I'm hoping they figure out a way to keep them all lit when there's nothing going on.
For me updating to the latest iCue fixed the issue, but only half of my fans, my RAM and cooler light up. Strangely enough they all flash during combat, but in general most don't light. I'm not sure if it's because I have to use two lightning node pros to power the RGB for all the fans, but it's irritating to look at playing lol. I'm hoping there's a fix for this.
