I put so much time into the Panzer Dragoon games on Sega Saturn. Saga was one of the best JRPGs of that time period, and it's painful to see how underrated and under appreciated it was because it came out at the end of the Saturn life. Panzer Dragoon Orta is also my favorite original Xbox game, and I still play that all the time in the native 4K/60fps re-release on Xbox One X.

Yep, same. If you still have a Sega Saturn and like Panzer Dragoons lock-on mechanic you might want to also check out "Bulk Slash" and "Soukyugurentai Otokuyo".

What exactly is a Sega Saturn series? I'm taking it to mean that the series started and had more than one game on the Saturn, and all I can think of that fits this is Bug!, Clockwork Knight, Dragon Force, Gungriffon, and the three Gundam Side Story: The Blue Destiny games.
Really doesn't seem like there's much competition, though some of those games are very good.

Not Saturn, but I'd recommend Rez, Omega Boost, and Gamera 2000.
The first two are very different games but you can strongly feel the influence of significant people on the dev team having previously worked on Panzer Dragoon games.
Gamera 2000 is a shockingly solid Panzer Dragoon clone. At times I'd say it plays better than its inspiration.

Dragon Force remastered would be amazing.

I imagine if Dragon Force ever got remastered the art would be completely butchered just like what happened to Langrisser and 2D Final Fantasy games.
