I think the primary thing that is making it more difficult is that we are hurrying through it to see the next part rather than grinding to level up like we usually do.
In fact there are some things that make it easier - The enemies' dying attacks have been eliminated, for example. Hades Gigas / Hill Gigas used to cast Magnitude 8 before dying and doesn't in this version, for example.
The difficulty balance is feeling interesting, overall. It's kind of a smooth roller coaster being able to totally crush enemies for a few battles and then suddenly I'm in serious danger [fully healed mind you], and then back to crushing them. I kind of like that it's achieving a feeling of both really easy and really difficult seamlessly.
Who's this "we" person?
I would also like to mention that wearing Sprint Shoes don't help with leveling. It decreased your chances of random encounter. Each zone has a random encounter range, and the higher zones you go to, the higher the encounter rate. Sprint shoes in Overworld 1 would increase your encounter chance due to the seed generated / zoneCounter. As you get into higher zones, remove your sprint shoes and fight as many battles as you can. This will ensure that you're leveling up adequately to be prepared for future fights.
I'm sorry but Gigas still does do his Magnitude 8 attack before dying, i've noticed he does it much when dying with a physical attack.
That said, I don't think the final attacks at death have been removed - but there does seem to be a bug surrounding party action timing and enemy death animation, which may be the root of that issue. I've had characters take actions DURING the death animation, which just results in misses. If that's the case, then final attacks might not be getting timed correctly and just fail all together.
