Follow this guide, contains all the fonts you could ever want to replace. For reference I use the FF3/4DS font and it looks great.
Boosters:

I've been using the wemod trainer (perfectly safe, used it for years) to set my own gil, exp and speed boosters. Also has a no encounter cheat to complete all the boosters available in the console versions.
OG Soundtrack:

I don't replace the soundtrack personally as I like the remixes but it looks like theres plenty available to you
Additional:
On top of the additions made to the console versions I also downloaded this sprites mod:

Which replaces the character models with those from FF record keeper which I slightly prefer. I believe there is a mod for this for all the games.
For FF2 I also downloaded this character portrait mod to add them to text boxes

Steam Deck:
Not sure if this will be applicable to you but if you have a steam deck I believe you can achieve all of the above on the Deck although the process is a lot more fiddly. Personally I just use my deck in bed so I stream the game from my PC so it has all the mods and can enable the cheats through a wireless keyboard. Works perfectly for me but still not as good as having them run off the deck natively of course
With all the above I find that this offers everything the consoles do and more.
In terms of installing the mods all the links have pretty clear instructions and its just a case of dragging and dropping files in to the install folder. Note some mods may require a custom UnityPlayer.dll file to be replaced but if required it will state in the mod description.
