Tip for Endgame Weapon Levels+Evasion Multiplier Maxing
I just figured out a cool trick to increase the two most difficult things a bit easier. Not sure if it'll be applicable to everyone, but it worked for me.

1. Have a party member with a high Staff level. My Guy had it at level 11 by this point. Equip a Healing Staff.
2. Fight any enemy with crazy high defense. I went with the Stone Golem in Castle Palamecia.
3. Have the Healing Staff user hit the Golem to heal it. It usually gained ~600-800 HP per hit.
4. Have everyone else use physical attacks with your preferred weapon of choice. In my case, my party could never outdamage what the Golem was being healed for. For reference, my Firon and Maria have 80-90 Strength with weapon levels between 10-12 when I started this. If this isn't working, try downgrading to weaker items.
5. Cast Blink (or use Blink tomes) a bunch of times to increase evasion.
6. Now the Golem will miss most of the time with attacks.
7. Keep attacking a bunch of times, then swap the Healing Staff with something else and kill the enemy.
8. You'll gain a weapon level, and maybe an evasion multiplier, depending on how many times the enemy missed you. It'll never increase as quickly as older versions of the game, but I got a few levels doing this after being stagnant the whole game. Two birds with one stone.

What I like about this strategy is that you can have everyone gain weapon levels at the same time, and I can work on Evasion too. Many tips I've seen in the past only work for one party member at a time, just one weapon type, etc.
