In this game, if a weapon can apply a status effect, the effect procs 100% of the time as long as the attack connects. So as long as enemies don't dodge you, you can apply sleep (effectively stun for 1-4 rounds) to anything.
Even bosses.
And every hit refreshes it.
You can just dedicate one guy to be a dual swordsman and use the Sleep and Ancient blades (ancient blade applies Curse, which lowers enemy stats ridiculously much) and even though that guy will deal almost no damage, the rest of your party can basically take out bosses at their leisure.
It makes for a weird game where trash encounters are harder than bosses because of their numbers.
The early on stupidly easy way to get OP is to equip two shields. You can attack and gain unarmed levels while simultaneously gaining shield levels. With very high shield stats you are basically immune to physical attacks for most of the game.
So what I'd recommend:
Step 1: Equip 2 shields to all characters
Step 2: Level on noob enemies for a little while until you can get Warp from the enemies west of the starting town.
Step 3: Level Warp on Captains until getting it to rank 9
Step 4: Head to Mysidia and get Teleport
Step 5: Level Teleport to 16 on all characters fighting black flans
Step 6: Level unarmed/shields/spells as high as you can off black flans until you have 999 MP and a couple thousand HP
Step 7: Complete first quest
