GPU temperature discrepancy between XSOverlay and Task Manager

XSOverlay says 90-100 degrees C, and Task Manager say 65C. Which should I trust? I really don't want to burn out my GPU (Radeon RX 6900 XT OC), and 100C is way too hot.

You cannot burn anything, GPU / CPU have had thermal throttling / auto shut off for years now :) I would trust Windows really or you can get GPUz which is free (also CPUz) and has a sensor page, quite a neat popular free tool.
