Little help with unlocked characters pls...

Outside of the starter characters I unlocked couple more by accomplishing quests needed to unlock them and then talking to the girl (forgot her name) out infront of the town but when I go to new game they don't show as options to play. Do I need to do something specific or click something special to be able to play them now?

Load your saved game, open your character menu and click on "Character Collection".

So I did this and basically it is letting me log into the new character unlocked but it's taking the place of my main character and his quests etc... So I have a question, is there no way to unlock them so I can start the game all over but play them? I was hoping when I log into the game I would have th option to see all my characters and pick which one I wanted to play and they would all have their own unique game. Not really a fan of sharing my story and quests among all characters.

The story is character agnostic, the character you play has no bearing on it whatsoever. During your exploration on the world you find different memories of the different characters but it just provides some backstory of the characters and it is not something that is exclusive to the character that you are playing. The progression of the game itself is tied to your progress with multiple characters and not just one. So no, there is no way to start the game with a different character than the starting ones and there is no reason to do so either.
