Setting it up as last priority and accepting only things you expect to get an overflow of is a save way to dispose of any excess and prevent settlers from ending up with full personal inventories which would stop them from doing work.
You could also always set up extra storage chests on lower priority than normal to just fill up with any excess so you can manually sell it for coin every now and then, or set up composters to convert excess compostables into fertilizer, but sadly composters work like crafting stations rather than inventories which makes using em as a overflow catch a bit of a hassle.
If you do not have a Pawnbroker yet, you soon will. He will buy anything. You can stockpile unwanted items until he agrees to join your settlement and then you can sell it to him for extra coins to buy enchants, travel scrolls, weapons, outfits .... a lot of helpful stuff.
My warehouse layout is usually 50 or so chests, each one assigned to different categories for easier collection/stacking. As each chest fills up, I assign more chests to keep up with the growing stockpile of resources. Then every so often I'll 'flush' the excess resources for a hefty payday, and spend that gold for the things I need more of.
P.S. I have about 90 top priority boxes in my central storage with only 1 lowest priority dump box that my settlers keep cleaned out. As a side benefit of a dump box, if my settlers don't know what to do with an item, they will put it in the dump box and then I know I need to make a permanent home for that item.
Pawnbroker really picky about how many people live in it. Only way I got that working is to have a lot settler live in my base already. Usually I like have one of each type at less. Few more guard then normal.
