How do you get villagers to farm?
in the assign work tab there is no like section for assigning a zone for farming. i have the like farmlands tiles set but do i need to initially plant seeds for them to start doing it themselves or what do i do to make them? i have the priorities thing set too but my fields are baron...

You need to put the first seeds in yourself. After that they harvest and replant the set fields on their own.

Like said: A farmer harvest what you planted. I change fields, in seeds planted, only for what I want to be cooked or what I can cook, with my seeds.

1st I plant seeds to harvest; 2nd I plant seeds for what I can cook with them; 3rd I plant seeds for I want to be cooked; 4th Is optimization of the fields, for cook/sell, in that settlement.

Like trees, plant the trees you want and get them harvested.

You can increase the efficiency/workflow by setting a "restricted" zone for the settlers you want farming, this keeps them from wandering around to do odd jobs - just remember to include storage and food in the restricted zone. I believe this is needed if they keep wandering off to pick blue berries on the other side of the island.

how big of a size of crop fields is best? i see some people do like long rectangles basically so is that optimal?

I am not sure, since there is always a overproduction in my villages.
You need 2 wheat per animal, maybe the same for villagers in vegetables. I did not find how much a villager eat(?), but in the back of my mind I think they will eat like 1-2 of the cooked recipes.

I think short ways between tasks is optimal for villagers, like: bed, food, workplace.
