I tried all possible hold-key clicks right-click, etc.. cant find it, nor in the settings.

Make shovel (at workstation, anvil, etc).
Put shovel on hotbar (or pick up and hold with mouse)
Click left mouse where you want to dig.
The floor tiles pop out - can be placed ones like paths and stone or natural ones like snow.

If you are trying to dig a hole for a pond/water, just use a bucket to pickup water and drop it where you want it.

in the case of decorations like carpet though any tool will work
