How does ammo for settlers work?
When I give a pistol to one of my settlers, it shows the amount of bullets I have in my inventory. When I move my bullets in a chest, then the settler seems to have no ammo?
I don't really understand how it works.
One of them died recently, and he had a good gun. Is it because I was not around so he couldn't use the bullets from my inventory?

They use basic ammo and have infinite of it :)

Ah! So even if the number of bullets says zero, they're still able to use the gun.

Edit: then how the hell did my settler die? He had a gun, armor, and was supposed to hide inside when low health.

Was the door left open? Or maybe he got trapped trying to walk somewhere but kept getting knocked back. I have seen that happen before, but it's pretty rare

I found him dead just outside the wall of my settlement.
My doors are set to auto, so that can't be the problem.
Maybe he somehow got stuck between the terrain and the zombies that spawn at night...?

If he was a touch far away and another enemy flanked him, it's not out of the question for him to die. The terrain can be evil if there isn't a good path around in the defend zone. I would try to clear it enough so that enemies can't hide behind trees, too.

If it was from a normal zombie, that's gonna be pretty rare for death if someone has a gun and armor. Is it possible that it was raiders that did it?

In either case, gearing up your settlers per stage of progression is essential. I personally like to put guards at the entry points (N, S, E, W) to my village with a hallway and their room attached separated by a door. And having two guards (if feasible) per side will make sure they defend more successfully.

Raiders are a different style of fighting though. So always be careful how you choose to fight them.
