Is there a way to assign villagers to gather stone and ores?

Unfortunately not yet. It's on the list of features to add :)
But you can send an explorer on an expedition. He will bring back a small amount of ore depending on the mission you send him on

If you want a quick way to manually gather stone, go to the nearest cave with some explosives and start chucking them recklessly. You can easily get several stacks of stone doing that, and clear out large parts of caves.

for the most part they're random drops. There's a few ways to consistently get them but that comes later in the game from specific villager types.

Keep breaking pots and boxes in caves and you're bound to find some.
