The races you need to do are the tutorial ones and the early beginner ones just to get through the first two tiers of story goals, if that. After that you get the option to hire your jockeys (you get a choice of four in each race, with different costs and skill levels) and they'll race for you. Good jockeys will shorten the odds (but do not guarantee victory!) and cheap jockeys are a good way to get residual income from middle places in races.
