Hello there! Sadly you cant undo the decals, but you can always cover them with paint and try again!
In Story Mode you will unlock the disassembly tool after the quest which introduces you to the auctions. In Sandbox mode this tool is unlocked right away. It allows you to disconnect part or the whole model :)
I understand that you want to be as close to reality as possible but this is NOT reality: it's a videogame.
Considering that you did implement some videogame features (such as the "fully paint a part" tool), I don't understand why you didn't also implement an undo feature.
If it's because of thecnical issues, OK but if it's a deliberate choice, then not OK.
