Assigning races to specific work spots
Can we do that? If not, why?

Not that I'm aware off, but you can increase each individual race's job priorities. I forget the exact menu, but that way you can achieve your desired outcome.

Right click on a plebs icon to open the immigration / services / fulfillment menu, in the occupation area look for a work priorities button. In that menu you can assign overall priority (or preference) for each race to the 4 major job categories (agricultre/crafting/services/administration) or click on the categories icon to see the preference for each jobs and the slide bar.

By setting a race (or a species) to have a high prioritiy for a particular job and by race restricting housing in that job area to the race you want- you can find success.

Example. Current playthrougj I'm Amevians. I took pig slaves and maxed the pigs priorities agriculture / farming and built pig homes near my farms. I took human slaves and raised their job priority to max for admin/laboratories amd assigned the houses near my labs to human only. I lowered these job priorities for my Amevians, and the game naturally moves my slaves into those homes and they will work those jobs. It takes some fine tuning.

You can also reduce a races priority for specific tasks so that they will never take one of those jobs. That how I've been keeping humans from trying to take farming jobs i want my cretonians doing. The only drawback is that if some cretonians die the job will stay unfilled until i authorize more cretonians immigrants or their kids grow up to fill the job.

Yes, you can turn it all the way down to 0. I've never seen any race take one of those jobs once it was turned down that far. It's risky though, since nobody from another race will come fill in if you don't notice that you've had workers die.
