I think --->>> Several 90 degree angles CLOSE TOGETHER should create roundness. When the 90 degree angles are too far apart they do not create roundness. Check the roundness overlay.
This works with every building by the way - simply remove the one wall tile on a corner and that corner will be counted as round and will emit roundness. Just keep an eye on the isolation stat, because removing too many wall tiles could reduce isolation below 100% on small buildings.
Alternatively, if you don't mind wasting a bit of space, you can also build a wall tile just outside the default wall, onto any wall tile that's next to the corner tile, like a little protrusion that makes the corner look jagged.
I also build quarter or half-circle bakers, latrines, and carpenters that I can mix and match. Once the circle is complete, the roundness meter reads it as round.
