Slaughter herd
Why do I have to slaughter every animal, why can I slaughter a few to hold me over....

You mean in the pastures?
Because it's an emergency measure you best should not need to do. One or a few is what happens normally.
If you need "a few" in a bigger city, clean one pen and let it repopulate with the livestock boxes on storage.

Yeah I usually keep 50 livestock in storage and export the excess for the exact reason, but now I learned that i can import bread super cheap so it shores me up if I need to increase food production
