You can adjust what job's your civilians and slaves can work in the Occupations tab, there's a job priority button that will let you set their priorities. Hope this helps!

ok thanks i got it all working i just didnt know if slaves were only able to work in basic extraction/refining jobs

I dont know if its actually calculated but in game extraction/work type jobs arent very satisfying for certain races. While they are skilled they arent happy doing it. something to consider with slaves and rheres even a button to quick prioritize by skill or happiness with job

i guess that makes garthimi and cretonians good slavesfor mining and farming respectively. do different races get fed up with being slaves more or less?

Yes cretonians have high submission so they are more easily enslaved without them revolting. Consider the race's atrributes though such that a revolting dondorian even unarmored can do some damage to your citizens especially if human or cretonian
