You can but the specifics of it are vague. Here is what i was able to understand after numerous tests. Oddly, it is pretty similar to pokemon with their IVs ranging from 0 to 31 and that in itself dictating how high that stat can go.
You stats have a rank value that goes
E -> D -> C -> B -> A -> S
Every time you level up, all your stats go up an a set amount. You stats will reflect a percent of their max potential depending on their rank. So at level 50, if you have an E rank stat it will be pretty absurdly low whereas if you had it as S rank you could be at 1,500. I myself starting seeing my own stats max out roughly after i think it was 45 but i'm just estimating 50.
Each rank appears (emphasis on appears; cause even i'm not 100% sure) a few steps. So even after seeing an upgrade happen, that doesn't mean it will jump up to the next rank such as from C to B
There are three ways to trigger an upgrade:
1 = wild $eX
2 = after mating is successful and a pregnancy occurs
3 = after a level up thru mating
I want to say that the #1 roughly triggers about 1 in 5 times so it kinda felt RNG based. #2 for me triggered about half the time and #3 happened every single time.
In order to trigger it, that Nephelym has to have a equal or higher rank than you. So it won't trigger if you are C rank and they are D/E rank. Also the higher they are, the more likely it triggers. So if you are D rank and they are S rank, you may even skip C and B and go straight to A.
You stats will max at 1,200 at A rank and won't go further until you get them to S rank which then, the new max will be 1,500
Starting at world level 3 (for each respective Nephelym) you'll occasionally see a Unique grade as opposed to Common and Uncommon and those Unique have a chance to be S rank in whatever stat those Nephelym are good at. You may also see a Rare but not too often and at world level 4 you can see Rare(s) more often with better stat load outs. Additionally after level 5 you can even bump into Legendary (those are really difficult to catch/beat without high ranks). Rare, Legendary, and Unique will be the key to helping you unlock higher ranks for your own stats if you can beat them at Wild $eX and take them back to your homestead to mate with.
As a tip, Foxen have good Dex, Vulwarg have good Str, and Risu (bunny) have good fertility and all 3 of them are available from the beginning of the game with no key stone quests done. If you want a good Willpower, the first one that comes to mind is Harpy and for Allure, i think the Dragons or Elf (Sylvan) are good options.
TL;DR = go have raunchy fun with nephelym that have higher stat ranks than you and aim for Unique grade which start appearing at world level 3. Unique(s) can you help reach S rank safely but if you got good stats aim for beating Legendary grade cause those have a bunch of stats all pass C rank with sometimes 2 at A and 1 at S rank
